Job Description

We invite you to join the world of luxury hospitality at Raffles & Fairmont Doha as our new Demi Chef de Partie.

The Demi Chef de Partie supports the Chef de Partie in delivering exceptional culinary experiences in line with the luxury standards of Raffles & Fairmont Doha. The role is responsible for the preparation, cooking, and presentation of high-quality dishes while ensuring consistency, portion control, and attention to detail. The Demi Chef de Partie contributes to efficient kitchen operations through accurate mise en place, effective teamwork, and timely service execution while maintaining the highest standards of food hygiene, safety, and cleanliness. The role also supports stock control, minimizes food waste, assists in guiding junior kitchen colleagues, and contributes to a positive culture of culinary excellence and continuous improvement.

Key Responsibilities:

• Assist the Chef de Partie with daily kitchen operations and food preparation
• Prepare, cook, and present dishes according to established recipes and luxury hotel standards
• Complete daily mise en place and ensure all ingredients are prepared and available for service
• Maintain consistency in taste, quality, portion size, and presentation
• Ensure timely and efficient food production during service
• Follow recipes, cooking methods, and presentation standards accurately
• Maintain high standards of cleanliness, hygiene, food safety, and kitchen organization
• Monitor food quality, freshness, and proper storage of ingredients
• Support stock control, inventory management, and minimization of food waste
• Operate kitchen equipment safely and report any defects or maintenance issues
• Assist in receiving, storing, and checking food deliveries as required
• Work closely with the culinary team to ensure smooth and efficient service
• Support and guide Commis Chefs and other junior kitchen colleagues when required
• Contribute to menu preparation, daily specials, and continuous improvement initiatives
• Follow all hotel policies, HACCP requirements, health and safety procedures, and departmental standards

Qualifications

What will you bring to this role?

• Culinary qualification or diploma
• Previous experience in a professional kitchen, preferably within a luxury hotel and/or resort
• Good knowledge of food preparation, cooking techniques, and kitchen operations
• Understanding of HACCP, food safety, hygiene, and sanitation standards
• Ability to follow recipes, specifications, and presentation standards accurately
• Strong teamwork, communication, and organizational skills
• Ability to work efficiently under pressure in a fast-paced kitchen environment
• Passion for quality, consistency, and culinary excellence
• Good attention to detail and willingness to learn and develop
