Following a major redevelopment of the Homestead and Guest Wings, Bullo River Station will reopen in May 2027 as a reimagined luxury lodge and proud member of Luxury Lodges of Australia.
The Guest Chef is responsible for creating memorable dining experiences that become a highlight of every guest's stay. This role delivers all guest dining including breakfast, lunch, dinner, picnic experiences and special event dining for a small number of guests. Central to the role is showcasing Bullo River Station's food philosophy through menus that celebrate’s Bullo beef, produce harvested from the kitchen garden and the best ingredients from the surrounding region.
The Guest Chef works closely with the Guest Experience Team and Station Management to ensure every culinary experience reflects the spirit of Bullo River Station.
The role combines culinary excellence with genuine guest engagement. The Guest Chef is visible to guests, shares stories of the station and its produce, and creates personalised dining experiences that connect guests to place.

Key Responsibilities
Showcase the Story of Bullo Through Food through Exceptional Guest Dining Experiences
- Create a genuine paddock-to-plate experience that connects guests with the landscape, cattle operation and the food production story of Bullo River Station.
- Work closely with the Station team to maximise the use of produce harvested from the kitchen garden.
- Ensure the culinary experience reflects the authenticity of a working cattle station while delivering luxury lodge standards.
- Prepare and present breakfast, lunch, dinner, and special dining experiences.
- Create personalised menus that accommodate dietary requirements and guest preferences.
- Deliver high-quality dining experiences in a variety of locations including the Homestead, outdoor dining settings and unique station locations.
- Ensure every dish reflects the Bullo philosophy of generous, nutritious and memorable hospitality.
Contribute to the Guest Experience
- Engage confidently and naturally with guests throughout their stay.
- Share stories about the station, local produce and menu development.
- Participate in guest activities and special events where appropriate.
- Contribute ideas that enhance the overall guest experience.
- Act as an ambassador for Bullo River Station and The Landsmith Collection.
Lead Culinary Operations
- Ability to work independently through all sections with minimal support.
- Manage kitchen operations and daily service delivery.
- Maintain food quality, presentation and consistency.
- Manage food ordering, inventory and stock rotation.
- Minimise waste and maximise utilisation of station-grown and locally sourced produce.
Food Safety & Compliance
- Maintain the highest standards of food safety and hygiene.
- Ensure compliance with all food handling regulations.
- Maintain accurate food safety records and documentation.
- Ensure kitchen equipment and facilities are appropriately maintained.

Skills & Experience
Essential
- Previous experience as a Head Chef or Sous Chef.
- Experience working in boutique luxury hospitality.
- Strong menu planning and food cost management skills.
- Ability to work independently in a remote location.
- Excellent organisational and time management skills.
- Strong interpersonal and guest engagement skills.
- Current Food Safety Supervisor qualification.
- Current driver's license.
Desirable
- Experience in luxury lodges or remote hospitality operations.
- Experience working with paddock-to-plate or farm-to-table concepts.
- First Aid qualification.
- A passion for agriculture, conservation and regional Australia.
