About the Role

We are seeking a passionate and skilled Demi Chef - Indian Cuisine Specialty to join our award-winning Culinary team at JW Marriott Gold Coast Resort & Spa.

Reporting directly to the Executive Chef and Sous Chefs, you will play a key role in delivering authentic, high-quality Indian cuisine across our luxury dining venues and events spaces. This role will have a strong focus on supporting our significant wedding and events business, including large-scale Indian weddings and celebrations, where exceptional quality, consistency, and attention to detail are essential.

This is an exciting opportunity for a chef who is passionate about Indian cuisine and enjoys working in a fast-paced luxury hotel environment.

Key Responsibilities

• Prepare and cook authentic Indian cuisine in accordance with established recipes and quality standards.
• Assist in the preparation and execution of large-scale Indian wedding events and banquets.
• Prepare fresh ingredients, including portioning, chopping, marinating, and storing food items.
• Ensure all dishes are presented to the highest standards of quality and consistency.
• Monitor food quality, taste, and temperature throughout service.
• Support daily kitchen operations and assist with running shifts when required.
• Maintain exceptional food safety, hygiene, and sanitation practices.
• Operate kitchen equipment safely and responsibly.
• Assist with stock rotation, inventory control, and minimizing food wastage.
• Work collaboratively with culinary leadership and fellow associates to deliver memorable guest experiences.
• Ensure compliance with Marriott brand standards and local food safety regulations.

About You

The successful candidate will possess:

• Proven experience preparing authentic Indian cuisine in a hotel, restaurant, catering, or banquet environment.
• Previous experience in a similar role within a 4 or 5-star hotel environment preferred.
• Trade qualification in Commercial Cookery or equivalent.
• Excellent knowledge of Indian spices, cooking techniques, regional dishes, and traditional preparation methods.
• Experience catering for large events, weddings, or banquets highly regarded.
• Strong food safety and HACCP knowledge.
• Ability to work efficiently under pressure whilst maintaining quality standards.
• Excellent communication and teamwork skills.
• A positive, professional attitude and strong attention to detail.
• A genuine passion for culinary excellence and continuous learning.
