From morning to evening, guests can enjoy Thai-inspired and international classics served in a serene poolside setting, where fragrance and flavour come together beautifully. The menu highlights the best of Southern Thai cuisine, featuring smooth aromatic curries, fresh salads, and perfectly balanced pad Thai, all prepared using freshly sourced local produce, the catch of the day from nearby fishing boats, and homegrown herbs and vegetables from the Amanpuri gardens, offering a true reflection of authenticity, freshness, and refined island dining. Responsibilities and Duties: Lead and oversee all kitchen operations for the Thai restaurant, ensuring authentic, high-quality Southern Thai cuisine and consistent food standards. Design, develop, and update seasonal menus that reflect traditional Thai flavours while incorporating creativity and modern presentation. Manage kitchen brigade, providing clear direction, training, and development to ensure strong performance and culinary excellence. Control food quality, taste, portioning, and presentation to meet luxury brand standards and guest expectations. Ensure strict compliance with food hygiene, HACCP standards, and all health and safety regulations. Monitor food cost, inventory, and wastage, ensuring efficient kitchen operations and budget control. Collaborate with procurement and local suppliers to source fresh, high-quality ingredients, including local produce, seafood, and herbs. Qualifications Proven experience as a Chef de Cuisine, Sous Chef, or senior culinary role in a luxury hotel or high-end Thai restaurant. Strong expertise in authentic Thai cuisine, particularly Southern Thai flavors, ingredients, and traditional cooking techniques. Solid knowledge of kitchen management, food cost control, menu planning, and inventory management. High standards of food hygiene and safety with strong understanding of HACCP and kitchen compliance requirements. Culinary degree or professional culinary certification is preferred, or equivalent extensive experience in a similar upscale environment. Good command of English communication, computer literacy, and understanding of safety, fire & life safety, and environmental compliance standards.
