Head Chef | Galway Hooker

The Galway Hooker Irish Pub is looking for an experienced and hands-on Head Chef to lead our kitchen team and take ownership of the day-to-day kitchen operation.

Located on The Esplanade, just moments from Scarborough Beach, The Galway Hooker is a lively Irish-style pub with a strong local following. We’re known for traditional Irish and pub-style food, Guinness, live music, sport, quiz nights and regular food specials.

We’re looking for a Head Chef who enjoys being hands-on, knows how to lead a team and can deliver great food consistently across busy services.

What you’ll be doing:

• Lead and develop the kitchen team
• Take ownership of the day-to-day kitchen operation
• Plan and manage preparation and service
• Maintain food quality, consistency and presentation
• Manage ordering, stock control, stocktakes and wastage
• Monitor food costs and kitchen budgets
• Develop and maintain kitchen procedures and standards
• Manage food safety, hygiene and compliance
• Train and support the kitchen team
• Work closely with the Venue Manager and wider leadership team
• Be hands-on and lead by example during service

What we’re looking for:

• Minimum 2 years’ experience as a Head Chef
• Strong background in Irish, European or quality pub-style cooking
• Proven experience leading and developing a kitchen team
• Strong time management and organisational skills
• Hands-on approach and willingness to get involved in every part of the kitchen
• Calm and confident under pressure
• Strong understanding of food safety, stock control and kitchen costs
• Reliable, proactive and able to take ownership
