Head Chef – Three Wise Monkeys, Sydney CBD

Three Wise Monkeys is looking for a capable and motivated chef to take the lead in our kitchen at one of Sydney CBD’s best-known entertainment venues.

Located in near Haymarket, the venue attracts a diverse mix of city workers, tourists, locals and late-night crowds. With multiple bars, live entertainment and a lively trading environment, no two shifts are quite the same.

This opportunity would be particularly well suited to an experienced Sous Chef or Junior Sous Chef ready to step into their first Head Chef role. You’ll take ownership of a relatively small kitchen and team while gaining valuable experience managing food operations within a busy CBD venue.

The opportunity

This is a hands-on position for a chef who enjoys being part of service and can keep the kitchen organised as trade changes throughout the week. You’ll oversee the daily operation, lead the team and work closely with venue management to deliver consistent, quality pub food efficiently.

The role offers the independence of running your own kitchen, with the support and resources of an established hospitality group behind you.

What you’ll be responsible for

  • Leading and supporting a small kitchen team.
  • Managing daily preparation, service and kitchen operations.
  • Delivering consistent food quality, presentation and service times.
  • Planning for changing trade across lunches, evenings, weekends and entertainment periods.
  • Managing ordering, stock levels, food costs and waste.
  • Preparing rosters and maintaining appropriate staffing levels.
  • Upholding food safety, hygiene and WHS requirements.
  • Supporting recruitment, training and performance within the kitchen.
  • Working closely with venue management on promotions, functions and key trading periods.

What we’re looking for

  • Experience as a Sous Chef, Junior Sous Chef or Head Chef in a pub or similar style environment
  • A hands-on leadership style and willingness to work alongside the team.
  • Confidence managing service in a lively and changeable trading environment.
  • Strong organisation, communication and time-management skills.
  • A sound understanding of food costs, stock control, rostering and waste management.
  • The ability to maintain standards while responding to different levels of trade.
  • Food Safety Supervisor certificate, or willingness to obtain one.
