Head Chef – Royal Albert Hotel

The Royal Albert Hotel is looking for a motivated and hands-on chef to lead our close-knit kitchen team. With a smaller kitchen operation and team, this is an excellent opportunity for an experienced Sous Chef or Junior Sous Chef ready to step into their first Head Chef position. It may also suit an established Head Chef who enjoys working in a more intimate, community-focused pub environment.

This is a practical, hands-on role offering genuine ownership of the kitchen without the scale and complexity of a large-volume venue. You’ll have the opportunity to develop your leadership and commercial skills while working within a supportive hospitality group.

About the role

As Head Chef, you will take ownership of the day-to-day kitchen operation, leading from the front during preparation and service while maintaining strong standards across food quality, safety and consistency. You will work closely with venue management to manage the kitchen efficiently, support and develop the team, and deliver a consistently enjoyable experience for our guests.

Key responsibilities

  • Lead, train and motivate a small, close-knit kitchen team.
  • Oversee daily preparation, service and kitchen operations.
  • Maintain consistency, quality and presentation across all menu items.
  • Manage ordering, stock control, food costs and waste.
  • Maintain food safety, hygiene and WHS standards.
  • Coordinate kitchen rostering and support recruitment and performance management.
  • Work collaboratively with venue management to ensure smooth and efficient service.
  • Identify opportunities to improve kitchen systems and menu performance.

About you

  • Experience as a Sous Chef, Junior Sous Chef or Head Chef within a pub, hotel or restaurant environment.
  • Ready to take the next step into a kitchen leadership role and build your management experience.
  • A confident, hands-on chef who is comfortable leading from the front.
  • Organised, reliable and able to remain calm during busy service periods.
  • Strong communication and team leadership skills.
  • A practical understanding of ordering, stock control, food costs and waste management
  • Food Safety Supervisor certificate, or willingness to obtain one.
